Mold in food products poses a significant challenge for food manufacturers. Natamycin is a highly effective antifungal solution obtained through an aerobic submerged fermentation process using the microorganism Streptomyces natalensis and similar species.
Unlike many antimicrobials, natamycin is effective at low concentrations and active across a wide pH range (3-9). It is used in very low doses, resulting in cost savings compared to other natural inhibitors.
Natamycin, widely used as a food preservative, is approved by the WHO, EFSA, and FDA. It is also used in Europe as a preservative for surface treatment of cheeses and cooked sausages.

Application Areas
1. Dairy:
- Prevents mold growth and fungal metabolism, especially in yogurt, cheese, and buttermilk.

- Effectively prevents spoilage, particularly in dry sausages, when sprayed on the meat's surface.
3. Beverages:
- Prevents the alcoholic fermentation and flavor/color changes caused by molds and yeasts in fruit juices.
4. Grains:
- Extends the shelf life of products like pasta and bread when used effectively.
5. Fruits:
- Prevents spoilage of various fruits such as tomatoes, apples, oranges, peanuts, etc.
